Sweet Potato Hash

Turn a good morning great (and power packed) with this sweet potato hash.

Start by bringing a pot of water or broth to boil for quinoa. Move to sautéing onion and one small cubed sweet potato seasoned with your favorite spices. I like garlic powder, cayenne pepper and turmeric for their extra super powers. When water boils, add quinoa with a pinch of salt. When quinoa is ready, add to sauté pan with vegetables and add fresh herbs. I used basil and green onions in this recipe. Add farm fresh eggs to pan letting the whites spread throughout the hash but keeping the yolk intact. I also added a few cubes of previously cooked fajita steak to add an extra protein punch and some flax seed for extra fiber and flavor. When whites are cooked through, slide the whole hash right on to a plate. Finish the dish with a few more green onions, queso fresco and with a warmed corn tortilla on the side.
Yep, this day is off to a great start!

Apple pie oatmeal

Perfect for a cold morning… With just a few simple ingredients and as fast as it takes water to boil. It’s as comforting as grandma’s apple pie, and is a healthy way to warm up the day.

The steps:
Start a few cups of water to boil. Finely chop the small apple unpeeled, pulling out the chunks that have too much peel as a snack for the cook. Heat coconut oil in small sauté pan, and soften the apple with allspice to taste. Mash banana in a small bowl with back of spoon and add 1/2 cup gluten-free oats. We used Bob’s Red Mill Quick cooking oats.
20140113-094237.jpgAdd boiling water a little at a time to the bowl and mix. Add more or less to preference. Add apples to the bowl and season with sprinkle of allspice, dash of salt and agave or your favorite sweetener. Mix and enjoy with warm coffee or vanilla almond milk.

Sandwich Bread

20131122-035114.jpgMade with a delicious mix from the Gluten Free Pantry line, this homemade bread makes the whole house smell amazing. Sometimes we add some extras to the mix, but it is great as is when going for a classic bread taste. With Thanksgiving around the corner, a few slices have been hidden set aside to make the best leftover turkey sandwiches, but tonight a warm slice with just a dab of butter was too good to pass up.
One of the best investments since going gluten-free has been buying a bread maker dedicated for GF breads. Popcorn

A favorite go-to gluten-free snack is popcorn… and a local popcorn shop Cornucopia, elevates the everyday to another level. With all the classic popcorn flavors you would expect and a large offering of “ah ha!” flavors that are exactly what you didn’t know you were craving. Happily, there are only a few options that are NOT gluten-free… Which is why we left with so many flavors and bought enough home to share. The website does not list allergens but the staff is VERY helpful in finding delicious GF options. Speaking of service… Are you in Austin? They deliver when you order enough! Not in Austin? They will ship it to you (or *ahem* your gluten-free loved one!) Can not wait to serve these at a future party. I’m thinking a flavored popcorn buffet would be so much fun! It’s one of my favorite things to introduce people to delicious food that ALSO happens to be gluten-free. These are sure to be a big hit!

Mini meatballs

These mini meatballs are a good antipasta all on their own or great mixed with sauce and used atop spaghetti or in a gluten-free sub sandwich. We started with a basic recipe concept, but converted to our 24/7 gluten-free lifestyle with a few quick changes. Simply sub in gluten free bread crumbs, adjust the spices to your taste and don’t be afraid to mix in some extra goodness. We added a few tablespoons of flax to these for a boost in fiber and dried Italian herbs since they were on hand.

As far as the preparation, the mini meatballs were first browned on each side in a sauté pan with just a bit of evoo before being placed into a baking pan. The oven was heated to 360• and meatballs were added a dozen or so at a time after browning, which gave them extra time to get crispy. After the last round had five minutes to bake, all the meatballs were placed back into a clean sauté pan and covered with spaghetti sauce for ten minutes. This lets all the flavors marinate, but cook too long and the mini meatballs will break down into a meat sauce.

Hope you love these little treats as much as we do. I can already see these becoming a game day favorite and the go to dinner when we want something fast but hearty.

Comfort Food

Tonight was about comfort, which meant all gluten-free yums but without any fuss. Macaroni gets an upgrade with four cheeses and bacon crumbles, spinach tastes soulful with a touch of butter, and Tyson chicken fingers taste homemade when dipped in peppered cream gravy made from scratch. It’s comfort food fast and a full happy belly with no gluten to disrupt the comfort later. Ps: this meal is a GF kid favorite!

Fish Tacos

Made with a simple broiled white fish seasoned with Louisiana Cajun Seasoning and a heavy dose of fresh lime juice. Wrapped in warm corn tortillas and topped with purple cabbage, green onion, cilantro, and avocado. Served with a side of saffron rice and black beans. It’s simple delicious and gluten-free fresh. Yum!

Cream with your coffee

It’s been a long few weeks, so nothing seemed better today than some coffee to kickstart back into things! Gluten is found so many places we would not expect, so finding a gluten-free label is sometimes a happy surprise, like on so many flavored creamers… because really, when we just wake up gluten is the last thing we want to worry about. Now to finish this day! (Maybe it’s time for another cup). 👍☕

Caramel Apple Sugar Babies

With Halloween quickly approaching, we have candy on the brain. Finding these Caramel Apple Sugar Babies has definitely cured our sweet tooth craving. For a more grown up treat, we poured these into a glass jar filled with a gluten-free spirit to infuse for next week. It is bound to make a delightful addition to a spooky party table of potions and treats at your holiday party.

Ps: love that they have a gluten free and peanut free label right on the box! No tricks, just treats!
